Strawberries with Orange Cream
Greek strained yogurt is a wonderful addition to any cook's pantry. Although the label says ""strained,"" it actually means drained, giving Greek yogurt the thickness of sour cream. The good news is that it has less fat than sour cream. This recipe can be easily doubled or tripled for a crowd.
HEALTH NOTE: Greek yogurt also comes in lower-fat versions. Try this with 2% yogurt instead of whole-milk yogurt.

Ingredients:
6 cups strawberries (1-1/2 pounds), quartered
1 tablespoon sugar
1-1/2 teaspoons grated lime zest, plus more for garnish (optional)
1 small container (7 ounces) plain Greek yogurt
3 tablespoons frozen orange juice concentrate, thawed
1 teaspoon lime juice (optional)
1. In a medium bowl, combine the strawberries, sugar and lime zest (if using), and toss well to combine. Set aside at room temperature to macerate, stirring occasionally, for 30 minutes to 1 hour.
2. Meanwhile, in a small bowl, combine the yogurt, orange juice concentrate and lime juice (if using). Refrigerate.
3. Serve the strawberries with any juices collected in the bowl, with the orange cream drizzled on top. Garnish with lime zest, if desired.

Makes 6 servings
Each serving has: 102 calories, 3.7 g fat (0 g saturated), 3 g protein, 16 g carbohydrates (2.3 g fiber), 0 mg cholesterol, 1 mg sodium. Good source of: vitamin C.
