Simple Turkey Caesar
This simple salad captures the essence of an authentic Caesar salad, but uses some shortcuts, like roast turkey from the deli counter and packaged croutons. And the dressing, though not as simple as using bottled Caesar dressing, gets bright, homemade flavors from fresh lemon juice and grated Parmesan.

Ingredients:
6 tablespoons mayonnaise
3 tablespoons lemon juice
1 teaspoon Worcestershire sauce
10 cups romaine lettuce slices (1-inch)
1 pound roast turkey breast, cut into 1/2-inch cubes
1 cup garlic-flavored croutons
2 tablespoons capers, coarsely chopped (optional)
6 tablespoons Parmesan cheese
1. In a large salad bowl, combine the mayonnaise, lemon juice and Worcestershire.

Add the lettuce, turkey, croutons and capers (if using), and toss. Sprinkle with the Parmesan and toss again.

Makes 6 servings
