Mocha-Chip Cake
Ice this cake with chocolate frosting or vanilla frosting with a little espresso powder mixed in.

Ingredients:
2 cups sifted cake flour 2/3 cup brown sugar 2/3 cup granulated sugar 1/2 cup unsweetened cocoa powder 1/4 cup buttermilk powder or nonfat milk powder 1 tablespoon espresso powder 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1/2 cup mini chocolate chips 3 large eggs 3/4 cup water 2 teaspoons vanilla extract 3/4 cup (1-1/2 sticks) unsalted butter, at room temperature, cut into tablespoons
1. Preheat the oven to 350°F. Grease two 9-inch cake pans. Line the bottom with parchment paper and grease the paper.
2. In a large bowl, with an electric mixer, combine the flour, brown sugar, granulated sugar, cocoa powder, buttermilk powder, espresso powder, baking powder, baking soda and salt, and beat briefly to evenly distribute the ingredients. Beat in the chocolate chips.
3. In a small bowl, beat the eggs with 1/4 cup of the water and the vanilla.
4. Add the butter and remaining 1/2 cup water to the flour mixture and blend on low speed to moisten. Beat on medium (high speed for handheld) for 1-1/2 minutes.
5. Add the egg mixture in three batches, beating well after each addition.
6. Scrape the batter into the pans. Smooth with a spatula. Bake for 20 to 30 minutes, or until a toothpick inserted in the center comes out clean and the top springs back when pressed.
7. Let the cakes cool in the pans on a rack for 10 minutes. Invert onto the racks, remove the parchment paper and reinvert onto the racks to cool completely.


Makes 12 servings
Each unfrosted serving has: 344 calories, 16 g fat (9.4 g saturated), 6 g protein, 46 g carbohydrates (1.7 g fiber), 85 mg cholesterol, 316 mg sodium. Good source of: selenium.

This dish look absolutely scrumptious. I would definatley try baking it one of these days. I will also give my friends this recipe. They will probably enjoy it too.
