Broiled Fish with Avocado Salsa |
If you like things spicy you can add more jalapeo or some cayenne pepper to the salsa.

Ingredients:
1 yellow bell pepper, cut into 1/2-inch pieces
3/4 cup grape tomatoes, halved
1/2 cup diced cucumber
1/2 cup minced red onion
1/4 cup chopped cilantro
1 tablespoon lemon juice
1 tablespoon minced jalapeÒo pepper
1-3/4 teaspoons salt
2 Hass avocados, halved, pitted, peeled and cut into 1/2-inch cubes
6 tilapia fillets (8 ounces each)
1 tablespoon olive oil
1 tablespoon ground coriander

1. In a medium bowl, stir together the bell pepper, tomatoes, cucumber, onion, cilantro, lemon juice, jalapeÒo and 1 teaspoon of the salt. Add the avocados and toss gently to combine. Refrigerate until ready to use.
2. Preheat the broiler. Rub the tilapia with the oil, then sprinkle with the coriander and remaining 3/4 teaspoon salt. Broil 4 inches from the heat for 5 to 6 minutes, or until the fish just flakes when tested with a fork.
3. Serve the fish topped with the salsa.
