Blueberry Boy Bait |
I like to serve this cake warm...especially because we don't usually have time for it to cool--plus no one wants to wait anyway, it is so good. But, it is equally good at room temperature and great for breakfast the next day. This cleverly named dish comes from my sister-in-law Cathy Freeman. Ingredients:
6 tablespoons butter, cut into small chunks, plus more for the pan
1 cup flour, plus more for the pan
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
1 large egg, separated
1/2 teaspoon vanilla extract
1 cup fresh or frozen blueberries
1/3 cup heavy cream, lightly whipped (optional)

1. Preheat the oven to 350°F. Butter and flour an 8-inch square glass baking dish.
2. In a medium bowl, blend the flour and sugar together. Add the butter and use a fork to break it up and incorporate it into the flour mixture until it looks like coarse meal (like making a piecrust). Measure out 1 cup of the mixture to use as topping.
3. To the remaining flour-butter mixture, add the baking powder, salt, milk, egg yolk and vanilla, and beat until smooth.
4. In a small bowl, with an electric mixer, beat the egg white until stiff. Gently fold the egg white into the batter. Pour into the baking pan. Spoon the blueberries over the top and then sprinkle with the reserved topping. Bake for 30 to 40 minutes, or until the topping is lightly browned.
Makes 9 servings
Each serving has: 311 calories, 13 g fat (7.9 g saturated), 4 g protein, 45 g carbohydrates (1.2 g fiber), 67 mg cholesterol, 297 mg sodium. Good source of: selenium.

Absolutely delicious! Easy and looks like the picture. The texture is so light and fluffy, yet the top is slightly crispy. Folding in the egg white really makes a difference. I will make this over and over again. Thanks!

Great recipe! I had been looking for a special dessert that wasn't the typical chocolate, and this was perfect. I'm on a tiny island in Portugal, and I couldn't get my hands on any blueberries, so I had to substitute strawberries - it was a HUGE hit! (My husband never says "wow" about food. He did last night!) Can't wait to try it next time with blueberries, though. Thanks! =)

My husband and I have been married for only a month. I wanted to make his Valentine's Day really special, and this cute, easy recipe was just the thing to help me. Thanks! I made it for breakfast and we liked it a lot. The blueberries were great, and I'm going to try it next with raspberries.

I was so pleased with this recipe. It turned out looking just like the picture! I substitued blackberries because that is what I had in the freezer -- it was wonderful.
